I want to apologize for not writing any posts for the past month or so. Because of the holiday season I have to buckle down and place my entire focus on the restaurant. Planning for the increase in business starts late summer and early fall. Thats the time I really take a look at my staff and see what positions they will fill and what staff I will need to hire. Along with staffing there comes menu planning, developing menus for special functions, increasing pars, and new ideas for our guests. I love the crispness and sweet flavor of bok choy. On Saturdays I like to go to one of the local farmers markets to see what is available. This week I tried the Buford Highway Farmers Market. When I drove into to the parking lot I noticed there was little parking available and was able to squeeze my little car into a small spot. The market was very busy, everyone out enjoying themselves. Since returning to Mckendricks Steak House in October of 2007 I knew I had a lot of work to do. I wanted to transform Mckendricks, return Mckendricks to one of the best steak houses in Atlanta. I wanted to bring Mckendricks to a new level, a level I could not even imagine. I did not know what the outcome would be or what the end result might be but I knew with my determination, ambition and years of knowledge I could bring Mckendricks to a new level.
