Caramel Apple and Pear Butter with Homemade Biscuits

Caramel Apple and Pear Butter with Homemade Biscuits
I have an confession to make: ” This Yankee can’t make biscuits!” For the past couple of weeks, I have been searching for the best biscuit recipe. I know, I’m a chef and have lived in the south for 20 some odd years and I don’t know how to make biscuits. I was looking for the southern type of biscuits, you know the ones that are so good you have to have more than one! I found that most biscuit recipes have more than three ingredients: flour, shortening, buttermilk, salt, and baking powder. After several test runs with these ingredients, I found the biscuits...

Madagascar Vanilla Bean Souffle

Madagascar Vanilla Bean Souffle
I am always fascinated by things that rise in the oven and wanting to surprise my wife with dinner and dessert for our anniversary I decided to look through some old recipes and came across this recipe for souffle. Long ago, I happened to get this recipe from a  French chef who opened 103 West in Atlanta many years ago. The kitchen would turn out some of the most beautiful souffles I had ever seen. This recipe is almost fool proof and allows a little more stabilization by adding a little cornstarch to the egg whites. I broke down the recipe and made a souffle to test before my wife...

Three Apples, One State, One Tart

Three Apples, One State, One Tart
For the last couple of weeks I have been taking a close look at each and every recipe on our dessert menu including our honey walnut bread which is probably our signature bread.  You see, after the (abrupt) departure of our pastry chef I made an executive decision and took on the day to day responsibilities of the pastry chef myself. Playing in flour, eggs, butter, sugar and vanilla is one of my life time passions. I started my career as a pastry /sous chef for Pano’s and Paul’s many years ago and because of my success Pano put me on a plane to The Culinary Institute...

Slow Braised Beef Short Ribs

Slow Braised Beef Short Ribs
* * Craig Claiborne once said “Cooking is like child’s play and adult joy. And cooking done with care is an act of love”. * When the fall weather arrives our source of inspiration changes. There is a change from the light dishes of summer to the more elegant home cooked meals. Hearty dishes of slow braised fatty cuts of beef, root vegetables and simple ingredients fuel my energy to make some traditional dishes. The one dish that I prepare as soon as the cool weather sets in is slow braised short ribs. I love the methods of cooking that are needed to...

After the holidays 2009

Getting back to normal at the restaurant. We had a very successful holiday season and a good year, no complaining here. Got through a small fire in the kitchen. We found out that the company cleaning the hoods were not cleaning the filters properly and a couple of them over the wood burning grill caught on fire. There was a big ball of fire behind the filters so I had to climb on the wood grill, knock off the filters, turn off the hood fan system and empty two full fire extinguisher into the hoods ( in the middle of a busy rush hour). Almost set off the overhead fire system but I got it out in...
